Vegan Tofu Sandwich

I am a huge sandwich gal. When I was vegan, I constantly craved a good hearty sandwich and thus, this amazing tofu sandwich was born!

I have changed it a little bit over the years, and I love to experiment so don't feel like you have to follow every ingredient you see- get creative!

Below are my usual favourites.



Here's what you'll need!

Ingredients

1 Block of Tofu

Bread (any sandwich bread is great)

1/2 Avocado

1 Tomato

Lettuce

1 tbsp Mayo (Vegan)

1 Green Apple

Ruffles Potato Chips


Tofu Marinade


3 tbsp Tamari

1-3 tsp Sriracha (depending on desired spice level)

1 tbsp BBQ Sauce


Instructions

  1. Dry and press tofu

  2. Cut tofu length ways into 1/4-1/2 inch thick slices, move aside

  3. In a bowl, mix ingredients for tofu marinade

  4. Pour marinade over tofu and let sit in the fridge up to 24 hours

  5. Thinly slice green apple

  6. Cut up veggies and put aside

  7. In a pan, add enough olive oil to coat the bottom and turn to medium-high

  8. Once hot, add tofu and cook until a dark golden colour appears on both sides, about 7-9 minutes flipping halfway

  9. Remove tofu from heat and assemble sandwich

  10. I like to add mayo and avocado to both sides, put down the apple and tomato, add the tofu, put lettuce on top of the tofu, and add the potato chips to the top end so that they stick to the avocado spread

  11. Cut in half and Enjoy!

*** For a healthier alternative you could marinate the tofu and then airfry it!
