Chicken Bahn Mi Sandwich

This lemon grass chicken bahn mi sandwich is packed with flavour, and is super quick to make! It does involve a little bit of prep the night before, but with a little planning, you get a quick and easy meal the next day!
Here's What You'll Need
Ingredients
Boneless Skinless Chicken Thighs
Soft French Bread
Mayonnaise
Cucumber
Cilantro
Pickled Vegetables (Carrot, Daikon, Jalapeno)
Sriracha
Chicken Marinade
3 tbsp Soy Sauce or Tamari
1 tbsp Sesame Oil
Grated Ginger
1 Stock of Lemon Grass
1 tsp Sugar
Cracked Pepper
Pickled Vegetable Ingredients
1/2 Cup Water
1/2 Cup Rice Vinegar
1/4 Cup Sugar
2 tsp Salt
Instructions
Chicken Marinade
Add marinade liquids together and mix
Chop 1 stock of lemon grass finely and add to marinade
Grate in 1-2 tsp of ginger
Add in sugar and mix
Chop chicken into bite sized pieces and mix well with marinade
Cover and place in fridge over night
Pickled Vegetables
Add water, vinegar, sugar and salt to a pot and put on medium heat
Julienne carrots, daikon, and thinly slice jalapeno
Add vegetables to a mason jar
Once steaming, add liquid to the mason jar and close
Place in fridge for at least 12 hours
Sandwich
Cook chicken either stove top or in the air fryer
I cooked it on the chicken setting at 380 for 10 minutes flipping halfway
While cooking assemble sandwich
Cut bread in half and add mayo to each side
Thinly slice cucumber and add to bottom bun
Add chicken onto sandwich and pickled vegetables on top of chicken
Add cilantro, and sriracha
Enjoy!
