Sweet Potato Pan Pizza

This pan pizza is inspired by a squash pizza that was popular in a vegan restaurant I used to work in. The sweet and savoury flavours really blend well in your mouth, and then the creamy brie cheese leaves an unbelievable after taste. A must try!
Here's What You'll Need!
Ingredients
Store Bought Pizza Dough
1 Small Sweet Potato
Olive Oil
1 Clove of Garlic
Brie Cheese
Red Onion
Brown Sugar
Butter
Thyme
Rosemary
Sesame Seeds
Hot Honey
Instructions
Heat oven to 450
Dice red onion
Add 1 tbsp butter and 1 tbsp olive oil to a pan and turn on low-medium
Add red onion to pan and let caramelize - this will take the longest
While onions cook, peel and thinly slice sweet potato
Slice brie cheese, and roughly chop rosemary and thyme
Take 3/4 of the pizza dough and roll it out briefly - it does not need to be very thin
Add 1 tbsp of oil into a cast iron skillet and coat the whole pan
Add the rolled dough into the pan and push to edges
Try to make sure the centre is thinner than the edges to promote even cooking
At this point onions should be browning, go ahead and add a sprinkle of brown sugar and continue to cook
Once brown and fragrant take the onions off the heat
Brush the dough with olive oil
Grate the garlic onto the oil
Add sweet potato in a thin even layer
On top of that add the brie cheese, onions, rosemary and thyme
Brush the crust with olive oil and sprinkle sesame seeds on top
Bake in the oven for 25-35 minutes depending on how thick the dough is
While baking, make the hot honey by adding honey, a little bit of water, and chilli flakes into a microwave safe bowl
Cook for 15 seconds and set aside to cool
When pizza is cooked, spoon over hot honey immediately
Cut and Enjoy!
