Pink Beet Pasta

When I moved to Amsterdam I was so lucky to live with my aunt and uncle who are both amazing cooks. My aunt came up with the pink pasta by adding beets into the boiling water while the pasta cooks. It creates such a lovely colour and a great flavour too!
over the years I have played around with her original recipe and ended up with this beautiful blend of lemon, goat cheese, and truffle.
Not only is this pasta pretty, but it is perfect to serve your loved ones this Valentines Day!
Here's what you'll need!
Ingredients
1/2 Package of Spaghettini
1 Cup of Frozen Sliced Beets
1/2 Lemon
1/2 Cup Goat Cheese
1 tbsp Truffle Oil
1 tbsp Honey
1 tsp Salt
Instructions
Add water to pot and turn to high
Add frozen beets
While heating, mix goat cheese, truffle oil, honey, lemon, salt
Set aside 1/4 of the goat cheese for garnish
Once water is boiling add spaghettini and cook until el dente
Drain pasta and remove beets
Add cooked beets, and remaining goat cheese mixture to blender and blend until smooth
Add pink mixture back into pot with pasta and mix well
Plate and garnish with the goat cheese we left aside earlier as well as lemon zest, parmesan and a lemon
