Lemon Shrimp Pasta

This lemon shrimp pasta was a favourite in my family growing up. With the lightness of the lemon, the smokey pancetta, and the great bite of shrimp, it even tastes great the next day!
The ingredients are super simple, which makes this a quick meal as well.
Here's what you'll need!
Ingredients
Spaghettini
2 Roma Tomatoes
1 Red Onion
2-3 Cloves of Garlic
150g Pancetta
1 Lemon
1 1/2 Cups of Frozen Peeled Shrimp
1/2 Cup Parmesan Reggiano
1 tbsp Olive Oil
Basil for Garnish
Instructions
Dice red onion and both tomatoes
In a pan on medium heat add 1 tbsp olive oil
Add tomatoes and onion
Let cook for 2-3 minutes until they start to soften
Grate in garlic or add chopped garlic
Add half of lemon and continue to cook down
In a separate pan add pancetta and cook until brown
While cooking add water to boil and add pasta once boiling
Just undercook the pasta
Once cooked, combine pancetta with the onion and tomato mixture
Add shrimp and cook until pink
Add in pasta with 1/4cup pasta water
Mix well and add other half of lemon as well as parmesan reggiano
Serve in bowl with basil as garnish and more parmesan and lemon
