in a creamy red wine tomato sauce

I started making this dish one night when I was trying to get rid of things in my fridge, and it turned out so great I now make it all the time! The comforting cream and deep wine flavours taste amazing paired with pillowy soft gnocchi.
Here's what you'll need!
Ingredients
1 Package Gnocchi 2 Roma Tomatoes 1/2 Large Red Onion 3 Cloves of Garlic Red Chilli Flakes Garlic Powder 2 tbsp Tomato Paste Heavy Cream 1 tbsp Olive Oil 1 tbsp Butter 1/4 Cup Red Wine Parmigiano Reggiano Parsley Salt Pepper
Instructions:
Add water to put and bring to a boil
Dice red onion, tomato, and finely chop garlic
Heat pan on medium-high and add 1tbsp of olive oil
Add onion and garlic and let cook for 2-3 minutes until soft
Add tomato and cook down for 2-3 minutes
Add salt and pepper to taste
Once cooked down, add 2tbsp of tomato paste
Combine and cook for 1-2 minutes
Add red wine and let cook down
Salt and pepper to taste and add red chilli flakes
After a few minutes, add heavy cream, I typically used around 1/8 cup
When water starts boiling add gnocchi
When gnocchi starts to float, drain and add to sauce pan ** keep a bit of pasta water to add to sauce
Add 1 tbsp butter
Combine the gnocchi with the sauce and add parmesan liberally
Add coarsely chopped parsley on top
Enjoy! We like to enjoy it with some nice bread and the rest of the wine!
