Banana Cake

With Peanut Butter Icing

My Mom started making this banana cake when we were kids, and my friends still talk about it.

Something about banana and peanut butter that can bring you back to childhood, but taste so sophisticated at the same time!

This recipe is super simple and a sure hit with a crowd!


Here's what you'll need!

Ingredients

1 1/2 Cup Flour

1/2 tsp Baking Soda & Baking Powder

1/2 Cup White Sugar

1/2 Cup Brown Sugar

5 Overripe Bananas

1/2 Cup (1 Stick) Butter

2 Eggs

1 tbsp Vanilla

Chocolate Chunks


Peanut Butter Frosting


1 Stick of Butter

About 1 Cup of Icing Sugar - start with less add more as needed

1/2 - 2/3 Cup of Peanut Butter (**NOT natural - the good sugary stuff)

2-3 tbsp Heavy Cream

1/2 tsp Vanilla


Instructions

  1. Preheat oven to 350

  2. In bowl whip butter and sugars together until combined

  3. In separate bowl mash bananas

  4. Add banana, vanilla and egg to butter and sugar - combine

  5. In separate bowl combine flour and baking powder and soda

  6. Slowly add flour mixture to wet mixture while mixing

  7. Add chocolate chunks

  8. Put in greased pan and add to oven

  9. Baked for 35-45mins or until golden brown

  10. Wait to cool then add icing

  11. Enjoy!

Peanut Butter Icing

  1. Add butter, peanut butter, and half of icing sugar to bowl and start mixing

  2. Add cream and more icing sugar as needed

  3. Continue to mix until frosting is nice and light
